    Protein Overnight Oats (Gluten Free)

    These Protein Overnight Oats are super simple to make and make for a great breakfast or snack! The creamy nut butter combined with the ripened banana is quite delicious. This protein loaded breakfast makes for a great meal on the go!

    What Makes These Protein Overnight Oats So Good?

    • I got into overnight oats during my bodybuilding days. While that is a thing of the past, I am still loving my oats for so many reasons! 
    • This recipe pairs so well with my Banana Chia Pudding too!
    • First off, they are such a time saver for the morning when you are on the go! I love prepping my oats at the start of the week and then eating them all week long.
    • Secondly, they are so delicious. I love the combination of the banana and the nut butter, so yummy!
    • Third, there is so much hidden protein between the protein powder and the chia seeds.

    What You Need To Make Overnight Oats With Protein Powder:

    • Oats-I prefer gluten free sprouted oats because they are much easier to digest. 
    • Banana-This adds some natural sweetness.
    • Almond milk-I like to eat dairy free as much as possible so this is my go to milk of choice, but if you tolerate milk you can use regular milk.
    • Protein powder-This is the brand I use because there are not any hidden funky ingredients. You can also use collagen peptides if you want protein powder without whey. 
    • Chia seeds-For extra protein. 
    • Almond butter-I am obsessed with the banana and nut butter combination.

    How To Make High Protein Overnight Oats:

    • First, place the banana in a bowl and mash it with a fork or a whisk.
    • Secondly, add all of the remaining ingredients in and whisk until smooth. 
    • Place the mixture into a mason jar and place in the fridge for at least 1 hour. I love making these oats before bed and having them set overnight.

    What Should I Serve Them With?

    • I love eating my oats with fresh berries or bananas. These overnight oat cups are always great for brunches too. I love to serve them with some of my favorite other brunch items: Spinach Mushroom Frittata, Dairy Free Hollandaise Sauce, and my Protein Pancakes. 

    How Long Do Thick Overnight Oats Last?

    • I suggest keeping the oats in the fridge for up to 5 days!

    Should I Eat Them Cold?

    • I prefer to eat mine cold but you can always heat them up in the microwave if you prefer yours warm. 

    Can I Add Chocolate?

    • Absolutely! I would add 1 tbsp of cacao power to start with the mixture.

    • 1/2 cup almond milk regular milk is ok if you are not dairy free
    • 1 scoop protein powder
    • 1 cup gluten free oats I like the sprouted ones, they are easier to digest
    • 1 banana mushed
    • 1 tbsp almond butter or peanut butter
    • 1 tbsp chia seeds

    Instructions

    • Mash up the banana in a bowl. Then add in all ingredients and mix throughout. Place in a jar for an hour or overnight at eat with optional fresh berries.

    Easy Blackened Cod

    This Easy Blackened Cod Recipe is quite delightful. The buttery cod combined with the cajun spices is delicious! This quick and easy fish recipe only takes 5 minutes to prep and 10 minutes to make which makes it a great weeknight dinner option.

    What Makes This Recipe So Good?

    • First off, it is SO easy to make!
    • Secondly, the pan seared cod literally melts in your mouth. It is so good.

    • I love to eat it as is or serve it with my homemade Pineapple Pico de Gallo.

    Blackened Cod Ingredients:

    • Cod-I like getting mine from Butcher Box. Every month they send me a monthly supply of all of my favorite proteins-fish, beef, poultry and all I have to do is defrost the night before!     Blackened Cod Seasoning-

    Traditional Cajun seasoning has a nice kick and this recipe has just that!

    • Salt-This is a must for Cajun seasoning. 
    • Chili powder & paprika-For a nice kick.
    • Garlic powder & oregano-For flavoring.

    How To Make Blackened Cod:

    • First, dry off your cod with a paper towel. Add some ghee to a pan on medium heat. 
    • Now, mix up your spices and sprinkle on the cod. 
    • Next, add the cod to the pan for 5 minutes, then flip and cook for an additional 5 minutes. 
    • Finally, remove the cod from the pan.

    What Should I Serve This Blackened Cod?

    • I love using this recipe to make Blackened Cod Tacos! To make tacos I suggest keeping it simple with just a tortilla, cod, a creamy slaw and some pickled veggies like onions!
    • If you are going for an even simpler route, this goes great over creamy slaw. 

    How Should I Reheat Cod?

    • If you are planning on meal prepping cod, I suggest not mixing it with anything. My favorite way to reheat it is by putting it in the air fryer for 5-10 minutes on 350. 
    • To reheat it on the stovetop, place 1 tsp of oil and pan sear for 2-5 minutes; flipping halfway.

    Ingredients

    • 1 pound cod Use my link from Butcher Box to the left and get free meat on your first order!
    • 1 tbsp butter or ghee. I prefer grass fed ghee.

    For the blackened spice:

    • 2 tsp chili powder
    • 1 tsp garlic powder
    • 1/2 tsp oregano
    • 1 tsp paprika
    • 1/2 tsp sea salt
    • 1/4 tsp cayenne pepper

    Instructions

    • Place the butter or ghee in a non-stick pan on medium heat until melted. Then mix together your spices and sprinkle on the fish. Add the cod to the pan for 5 minutes, then flip and cook for an additional 5 minutes. Serve as is or as a taco!

    What Makes This Keto Chicken So Good?

    • First off, it tastes just like a New York seasoned everything bagel, yet it is loaded with protein! 
    • The garlic aioli pairs perfectly with this chicken.

    Everything Bagel Chicken Ingredients:

    For the chicken-

    • Chicken breasts–I like to get my chicken breast from Butcher Box. Use my link HERE and get a free thing of meat with your order every month. 
    • Ghee-Or butter. This is used to help everything but the bagel seasoning to stick!
    • Everything but the bagel seasoning-This is a must to make it! I like to get mine from Costco or Trader Joe’s.

    For the garlic aioli:

    • Lemon juice-To give a nice kick. 
    • Avocado mayo-You can use regular mayo but I do like avocado mayo better because it is loaded with a ton of healthy fats!
    • Dijon-This is a must for aioli. 
    • Garlic-Fresh is a must!

    How To Make Everything Bagel Chicken:

    For the chicken-

    • First, preheat the oven to 350 and melt ghee in the microwave. 
    • Then, dip the chicken breasts in the ghee and then lay on a baking sheet. 
    • Now, coat the chicken in the everything bagel seasoning and place the bake on the non-stick baking sheet.
    • Bake for 18 minutes or until the chicken breasts reach 165 degrees F.

    For the aioli-

    • Place all ingredients in a bowl and mix until smooth.

    Can I Make This Healthy Everything Bagel Chicken In The Air Fryer?

    • Absolutely! You can make this dish in the air fryer, just be sure to flip the chicken halfway.

    • I am obsessed with pairing mini garlic potatoes with garlic aioli and chicken. We also love eating it with bacon brussel sprouts.

This recipe is great to have in your recipe book for those nights you need something quick and with little prep. Since you cook these frozen you don’t even have to worry about thawing the meat first!

    • Cooking spray oil-To prevent the pork chops from sticking. I prefer avocado oil spray.

    Step By Step Instructions

    First, insert the metal grate into the air fryer. Spray the grate with cooking oil spray. Mix all of the spices together then sprinkle on the pork chops. Place the pork chops in the air fryer for 10 minutes. Then flip and place in for another 10 minutes.

    • Tip # 1: You can cook the pork chops with this seasoning when thawed as well, you will just need to adjust the cooking time.
    • Tip # 2: Pork chops should be cooked to an internal temperature of 145 degrees F.
    • Tip # 3: You can baste the pork chops with different sauces after they come out of the air fryer to add additional flavor.

    Can I Marinate Pork Chops Cooked in the Air Fryer?

    Yes! You can, however, I suggest sticking to a dry rub marinate to keep the pork chops crispy on the outside. With that said, a nice sauce would go so nicely with these air fried pork chops on the side.

    How Can I Reheat?

    I suggest reheating in the oven at 350 degrees F for 5-10 minutes.

    What Should I Serve This Recipe With?

    I like to pair this with my crispy mini potatoes with paleo garlic aioli.

    Ingredients

    • 3 boneless pork chops I like to get mine from Butcher Box! Use my link to the left and save on your order every month.
    • cooking oil spray I like avocado oil spray from Coscto
    • 1/2 tsp sea salt
    • 1/2 tsp garlic powder
    • 1/4 tsp parika
    • 1/4 tsp black pepper

    Instructions

    • Insert the metal grate into the air fryer. Spray the grate with cooking oil spray. Mix all of the spices together then sprinkle on the pork chops. Place the pork chops in the air fryer for 10 minutes at 375 degrees F. Then flip and place in for another 10 minutes for a total cook time of 20 minutes. Allow the pork chops to sit for 10 minutes prior to cutting!

    Vegan Chocolate Covered Strawberries

    These Vegan Chocolate Covered Strawberries are so stinkin’ good and easy to make! You can have this homemade dairy free dessert on the table in less than 10 minutes.

    What Makes Vegan Chocolate Covered Strawberries So Good?

    • First off, this dairy free chocolate sauce is so silky and so good!
    • Secondly, the sea salt combined with the creamy and silky chocolate makes for a nice sweet and salty snack. 

    Dairy Free Chocolate Covered Strawberry Ingredients:

    • Strawberries-Make sure they are fresh, frozen ones won’t work. They will become mushy if you use frozen. 
    • Dairy free chocolate-I love the Enjoy Life brand of chocolate. It is naturally allergy friendly too so there isn’t any soy in it either.
    • Sea salt-This is totally optional but in my opinion it is a must! It gives these gluten free chocolate covered strawberries a sweet yet salty taste.

    How To Make:

    • First, take a piece of wax paper and lay it out on a sheet pan. 
    • Next, place your chocolate in a bowl in the microwave for 30 seconds. Once the 30 seconds is up whisk the chocolate really well! This is important do NOT skip the whisking step. 
    • Now, repeat the step above for a total of 3 times in the microwave and 3 different whisking periods. 
    • Once the chocolate is nice and smooth, dip your strawberries in the chocolate and lay out on the wax paper covered sheet pan. Sprinkle it with optional sea salt on top. If you are not going to eat the strawberries right away, you can place them in the fridge to set and hold up!

    How Do I Prevent Dairy Free Chocolate Sauce From Burning?

    • The key is slow cooking it in the microwave and whisking it in between! This helps the chocolate melt tremendously. If you do not whisk it, it will burn! If you do burn it the only real way of fixing it is by starting over. This is why I suggest microwaving it in increments so that it melts slowly! 

    Can I Freeze Chocolate Covered Strawberries?

    • No! If you freeze them, the strawberries will become rock solid. I do not suggest freezing any kind of chocolate covered fruit except bananas! If you want to make these in advance and prep them, place them in the fridge overnight!

    • 2 cups dairy free chocolate chips I like the enjoy life brand. Use carob chips for AIP
    • 12 washed strawberries
    • sea salt to sprinkle, optional

    Instructions

    • Add wax paper to a sheet pan. Place the chocolate chips in a small bowl in the microwave for 30 seconds. Then take the chocolate out of the microwave and whisk for 30 seconds. Do this process for a total of 3 times so the chocolate is in the microwave for 1 1/2 minutes but is whisked every 30 seconds. Dip the strawberries in a bowl then add to a sheet pan with wax paper on it. Sprinkle with optional sea salt. If you are not going to eat right away place the strawberries in the fridge to set.

    Easy Instant Pot Bacon

    Instant Pot Bacon is the easiest way to make bacon! No more needing to worry about the crazy clean up. When you make bacon in the instant pot it comes out just as good as stovetop bacon but no more messy splatters.

    What Makes Bacon In The Instant Pot So Good?

    • First off, as I mentioned above-you do not have to worry about any messy splatters!
    • Secondly, it comes out super crispy but not too well done.

    What Do I Need To Make Bacon In The Instant Pot?

    • Bacon! I love getting all of my bacon from Butcher Box. Every month they send me a monthly supply of all of my favorite proteins: chicken, fish, pork, and steak! All of their stuff is the highest quality. It comes frozen and every weeknight I just take it out of the freezer and let it thaw in the fridge overnight.     • Instant pot-I have this one HERE. I love this one because it has multiple functions. It is also an air fryer, pressure cooker and so much more. I love it because it only takes up one spot on the counter!
    • Pepper-To add to your bacon. Totally optional, but adds some flavor!

    Cooking Bacon In The Instant Pot 101?

    • First, add the bacon to the instant pot in a single layer and turn the instant pot onto the sautee setting for 3 minutes. Then flip the bacon and cook for an additional 3 more minutes. 
    • You may need to make multiple batches, if that is the case. Drain the bacon grease into a cup and finish up your batches.

    Can I Meal Prep Bacon?

    • Yes! Absolutely. Cooked bacon lasts for quite some time in the fridge especially if it is cured. I suggest storing it in a glass container if you are prepping it in advance.

    Easy Frozen Shrimp In The Air Fryer

    I love making Frozen Shrimp In The Air Fryer. It is such a quick, easy, and hassle free way to make dinner! No more having to worry about ingredients splattering everywhere when cooking dinner on the stovetop, the air fryer is the new way to go!

    These shrimp are delicious on their own but also taste great dipped in a sauce such as my Dairy Free Pesto Sauce.

    What Makes This Recipe So Good?

    • First off, its hassle free. I hate when I cook something on the stovetop and juices are flying everywhere. Not only to I have to clean up the pan then, but also clean the entire stovetop which is NOT ideal!
    • Secondly, I love using these recipes for the nights where I do not have much time to cook. Using the air fryer requires minimal hands on time

    What Do I Need To Make Frozen Shrimp In The Air Fryer?

    How Can I Make Frozen Shrimp In The Air Fryer?

    • Toss the frozen shrimp with the olive oil, sea salt, pepper and lemon juice and place in the air fryer on 400 for 15 minutes. If you are using mini shrimp you will need to cook the shrimp for only 10 minutes. Be sure to toss the shrimp at the halfway mark. 

    Do I Need To Thaw The Shrimp?

    • Nope! You can cook it frozen.

    • 1 lemon juiced

    • Toss all ingredients together and place in the air fryer for 6 minutes, then toss and place back in the air fryer for 6 minutes.     Kale Blueberry Salad With Pecan Cheese (Vegan)

    This Blueberry Kale Salad With Pecan Cheese is super light and delicious! The earthy tahini dressing combined with the nut cheese and fresh blueberries is to die for. This marinated kale recipe goes great with just about anything.

    What Makes This Blueberry Kale Salad?

    • The homemade tahini dressing is a client favorite of my meal prepping clients. The fresh lemon juice combined with the soft tahini and garlic is delicious, it is also super easy to make, too!
    • The pecan cheese adds a nice spin, I never realized how much nuts can resemble cheese, but they can! I love making different cheeses out of nuts, you can check out more of my recipes with nut based cheeses on my blog. My Dairy Free Lasagna is made with my homemade cashew based nut cheese too.

    Ingredients:

    For the salad:

    • Blueberries-Fresh blueberries! Wild blueberries are always preferred. 
    • Shredded Kale-You can buy bunches of kale and chop them yourself, or buy a bag of shredded kale. I like shredded because it is already chopped for you!

    For the pecan “cheese”:

    • Pecans-You can use any kind of nut here, nut pecans are my favorite. 
    • Nutritional yeast-This is my go to cheesy alternative for making nuts taste cheesy! I love nutritional yeast. It is a go to and favorite in paleo cooking.

    For the dressing:

    • Lemon-This in combination with the apple cider vinegar adds a nice kick!
    • Apple cider vinegar-To give this dish some acid.
    • Tahini-I am obsessed with the early flavors in tahini. Make sure your tahini is not old though. If it is old and dried out it will taste funny (trust me I know from experience.) 
    • Coconut aminos-This is my go to soy sauce alternative. It is naturally soy and gluten free!
    • Olive oil-You can use any kind of oil here but note that it may change the flavor profile a bit.
    • Garlic-For flavor.
    • Water-I personally like my tahini a little thicker, but I know others don’t. If you like your tahini thick, skip the water! If you like it thinner like some, add a little bit of water.

    How To Make:

    For the dressing:

    • Place all ingredients in the food processor and blend until smooth.

    For the nut “cheese”:

    • Clean out the food processor and blend until smooth. Like 20 seconds. 

    To assemble:

    • Mix all ingredients in a bowl. I personally like to allow the kale to marinate a bit so I allow it to sit prior to eating it. Sometimes I will even marinate it overnight!

    What Does This Salad Pair Well With?

    • I love making this salad with just simple baked chicken breast, or salmon! Even if you do not have fresh chicken or fish on hand, you can use my Frozen Salmon in the Air Fryer Recipe to make yourself a nice serving of protein to add on top without the hassle of needing to defrost anything.

    For the dressing:

    • 1 lemon juiced
    • 1/2 cup apple cider vinegar
    • 10 ounces tahini
    • 3 tbsp coconut aminos
    • 1 tbsp olive oil
    • 3 cloves garlic
    • 1/4 cup-1/2 cup water depending on the thickness you like of your dressing

    For the salad:

    • 10 cups kale
    • 2 cups blueberries

    For the pecan cheese:

    • 1/2 cup pecans
    • 1 tbsp nutritional yeast

    Instructions

    • Place all dressing ingredients in a food processor and blend until smooth. Then, add the dressing, kale, and blueberries to a bowl. Then, clean out the food processor and add in the pecans and nutritional yeast and blend for 20 seconds. Mix the salad together and serve. We like to allow the salad to marinate for hours prior to eating.

    Mini Dairy Free Chocolate Cakes

    These Mini Dairy Free Chocolate Cakes are super fun and easy to make! We love making these treats into mini bundt cakes. The soft and moist chocolate grain free cake combined with dairy free chocolate ganache is to die for. Plus these little cakes freeze well which means you can make these cakes far in advance!

    This recipe was inspired by my childhood favorite dessert-boxes chocolate cake! When I first found out gluten was making me so sick I thought I would never be able to eat cake again. Boy was I wrong! This cake is delicious, moist and it hits the spot!     • You can make this cake in advance and freeze it which means it is a great option for the nights you have company but do not want to spend all night in the kitchen!

    Dry ingredients

    • Almond flour-One of my go to’s when I am baking gluten free! Do not swap this out as not all flours are created equally so be sure to stick with almond flour. I like the Costco brand. 
    • Tapioca flour-This holds everything together. Think of tapioca flour as the cornstarch of paleo cooking. It is a binder!
    • Coconut flour-I love adding this to the blend. 
    • Coconut sugar-To sweeten. 
    • Cacao powder-This is what gives this chocolate cake its flavor! Be sure to get the unsweetened kind.   
    • Baking soda-To help the cake rise. 
    • Sea salt-To add a nice touch.

    Wet Ingredients

    • Eggs-To bind everything together. 
    • Almond milk & water-To keep this cake nice and moist! You can substitute it with coconut milk.
    • Coconut oil-This helps with keeping the cake nice and moist.
    • Apple cider vinegar-This helps this cake bake! It herpes the baking soda with its rising properties. 
    • Vanilla -To taste.

    Optional Dairy Free Chocolate Ganache

    • Dairy free milk-I like almond milk.
    • Dairy free chocolate chips-I love the Hu brand.

    Substitutions And Variations

    • Tapioca flour-You can also use arrowroot powder in place of tapioca flour.
    • Coconut oil-You can also use olive oil.
    • Dairy free milk-Any kind of dairy free milk will work although, almond milk is my favorite!

    Step By Step Instructions

    Step #1: Preheat the oven to 350 degrees F. Then, mix all of the dry ingredients in a bowl until the mixture is all mixed throughout.

    Step #2: Add in the wet ingredients into the dry ingredients mixture and mix until smooth.

    Step #3: Spray the mini bundt pans with cooking spray oil and evenly distribute the batter. Bake for 30 minutes or until you can stick a fork in the cake and it comes out clean. Then, add the optional chocolate sauce if desired.

    Equipment Needed

    • I love using silicone molds, they are super easy to clean and I find that things are less likely to stick. I get my mini bundt cake molds from Amazon or Walmart.
    • Large mixing bowl.

    Expert Tips

    • Tip #1: To ensure the cake is cooked all the way through, you can stick a fork in. If the fork comes out clean, the cake is done!
    • Tip #2: Allow the cake to completely cool prior to adding the chocolate sauce.

    Mini Chocolate Gluten Free Bundt Cakes

    Equipment

    • mini bundt silicone pans

    Ingredients

    Dry ingredients:

    • 3 cups almond flour
    • 1 cup tapioca flour
    • 1/4 cup coconut flour
    • 2 cups coconut sugar
    • 1 1/2 cups cacao powder
    • 2 tsp baking soda
    • 1 tsp salt

    Wet ingredients:

    • 4 eggs
    • 1 1/2 cup almond milk
    • 1 cup water
    • 1/2 cup coocnut oil melted
    • 1 tbsp apple cider vinegar
    • 2 tsp vanilla extract

    For the dairy free chocolate ganache: (optional)

    • 3 cups dairy free chocolate I like enjoy life brand
    • 1 1/2 cups dairy free milk

    To bake:

    • cooking spray oil I like avocado oil spray

    Instructions

    • Preheat the oven to 350. Combine all of the wet ingredients into one bowl and all of the dry ingredients in a separate bowl and mix. Then, combine the two and mix throughout. Now, spray the mini bundt pans with cooking oil spray and divide up the batter evenly. Bake for 30 minutes or until you can poke with a fork and it comes out clear. Allow the cakes to cool for a half hour prior to removing from a pan. While the cakes are cooling make the chocolate ganache. Place the chocolate chips and milk in the microwave for 30 seconds, then whisk and place in the microwave again for 30 seconds. Whisk again and place them in the microwave for another 30 seconds. At this point the chocolate should be nice and smooth. Pour the chocolate over the mini bundt cakes and serve.
