Cucumber Apple Salsa Over Fish

PREP TIME: 10 MINUTES
COOK TIME: 20 MINUTES
TOTAL TIME: 30 MINUTES

INGREDIENTS:
For the salmon:
2 pieces of wild caught salmon (you can also use mahi mahi or any other kind of cold water fish) approx 6 ounces each
2 tablespoons extra virgin olive oil, you can also use any other cooking oil
1 lemon, juiced
1 teaspoon of dried dill
For the salsa:
1/2 large cucumber or 1 medium size cucumber
1 apple, chopped (I prefer green apples)
½ red onion
1/2 cup fresh herbs, chopped (I like parsley or basil)
1 lemon, juiced
OPTIONAL: greens and chips. I like to use siete chips for the leftover salsa and I like to eat the salmon over the greens.
INSTRUCTIONS

Preheat the oven or air fryer to 350.

Mix the oil, lemon juice, and dill for the salmon.

Pour the mixture over the salmon.

Place the salmon in the oven or air fryer for 18 minutes OR longer if you like it crispier.

While the salmon is cooking, chop up the cucumber, apple, and onions into bite size pieces.

Now, mix the cucumber, apple, and onion mixture with the lemons and fresh herbs.

Once the salmon is done serve with the salsa on top. I like to eat my salmon over greens.
