Strawberry Basil Mocktail
Strawberry basil mocktails are the perfect summery drink. Not only do they taste good, but they are good for you! The natural sugars from the fruit add so much flavor to the drink and the paleo simple syrup adds the perfect amount of sweetness. I discovered that the key to making paleo simple syrup is honey.
PREP TIME: 5 MINUTES
COOK TIME: 15 MINUTES
TOTAL TIME: 20 MINUTES
SERVINGS: 6 DRINKS
INGREDIENTS:
For the strawberry basil syrup
**This is enough for 6 beverages. You can save the syrup for up to two weeks in the fridge.
3 cups filtered water
2 cups chopped strawberries (remove the stems)
½ cup honey
10 basil leaves
For 1 drink
1 cup club soda
1/2 cup strawberry basil syrup
OPTIONAL: extra basil leaves to garnish.
INSTRUCTIONS

Using a saucepan, place all of the strawberry syrup ingredients in the pan and bring to a boil. Simmer (medium heat) for 15 minutes and remove from the heat.

Let the mixture cool for 20 minutes.

I like strawberry chunks in my drink so I do not strain the syrup before serving. However, if you do not like chunks, you can strain the mixture with a colander strainer over a bowl.

Pour the syrup in a large mason jar or glass container. DO NOT fill the mason jar/container to the tippy top. Leave room for it to breathe (this may mean you need two containers or jars). (NOTE: if you are not the best pourer (like me), you may want to pour the syrup in a bowl with a lip on it to allow it to pour easier into the mason jar).

Mix the club soda and strawberry basil syrup.

Add an ice cube to a cocktail glass.

Pour the cocktail in the glass.
