After a long weekend in New Mexico for a wedding and Cinco de Mayo, I was reminded of the things that make me feel my best: homemade meals and lots of sleep. Don’t get me wrong, the food in New Mexico was amazing. I ate tacos at least once a day, but I was NOT used to all of the spice. By the end of the trip, I was really craving one of my homemade salads. There is nothing like homemade food, right? With only a week in between my trips to New Mexico and Greece, I wanted to feel my best so I made my top two priorities this week sleep and fresh meals!
My go-to smoothie bowl was a no brainer for my upcoming “clean” week. The freshly blended strawberries in the vanilla yogurt will have you tricked that you are eating dessert. Check out the recipe below.
Makes 3 servings
8 strawberries, stems removed.
1 cup blueberries.
1/2 cup dried coconut (I order them online from Thrive Market – Get up to $20 off of your first purchase by 04|30|20 If you’re reading this after 04|30|20, email me at [email protected] and I will give you an updated coupon code.)
1/4 cup cocoa nibs
Place the yogurt and strawberries in the food processor until the strawberries are blended.
Then, add your toppings on top!
