This super easy Sheet Pan Chicken Sausage and Veggies Recipe is one that will quickly become a go to in your weekly busy weeknights rotation. This healthy meal is a staple in our home! It is so versatile, you can make it with just about any kind of vegetable you have on hand too. This recipe can be prepared in less than 10 minutes. You can have dinner on the table in under 30 minutes!

Why I Love This Recipe
- This recipe is so versatile. You can make it with just about anything from turkey sausage to pork sausage. My favorite is to use the savory chicken sausage from Costco. It says paleo on the front. It is oh so good!
- This chicken sausage sheet pan dinner can be made with just about any vegetable too like fingerling potatoes, sweet potatoes, brussels sprouts, green beans, butternut squash, or even red bell peppers. Just use your favorite variety of vegetables or whatever you have on hand! There are so many different variations out there.
- My sheet pan chicken sausage dinner is great for busy nights! With minimal prep time and minimal effort, you can have dinner on the table in under 40 minutes.
- This recipe is made with minimal ingredients. It is naturally dairy free, gluten free, soy free, nut free and grain free.
Recipe Ingredients
- Pre-cooked chicken sausage-My favorite chicken sausage is Sabatino’s Chicken Sausage from Coscto. It is oh so good! However, any other types of sausage will work. I like the Applegate Apple Chicken Sausage too!
- An assortment of colorful vegetables-My go to for this recipe are peas, cauliflower and onion.
- Garlic powder, black pepper, and sea salt-For flavor.
- Avocado oil-This helps get the sausage and veggies nice and crispy.

Substitutions and Variations
- Vegetables-Be creative here! Feel free to use your favorite veggies. A few of my other favorites for this recipe are brussel sprouts, red onion, mini red potatoes, cherry tomatoes, broccoli and even sweet potatoes.
- Cheese-A little parmesan cheese sprinkled on top is my husband’s favorite!
- Assorted flavorings and seasonings-Maple syrup, lemon juice, and italian seasoning are a few of my go tos.
- Oils-You can also use extra virgin olive oil or any cooking oil of your choice.
- Red pepper flakes-If you like a kick.

This recipe lasts in the fridge for up to 5 days. You can reheat it in the air fryer or oven at 350 degrees F for 5-10 minutes. I suggest storing the recipe in an airtight glass container.

Sheet Pan Chicken Sausage and Veggies
Equipment
- Sheet pan
Ingredients
- 1 head cauliflower washed, and pulled apart into bite sized pieces
- 1 whole white onion onion sliced
- 1/2 bag frozen peas
- 2 tbsp avocado oil
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 pound chicken sausage I like the Sabatino's paleo brand from Coscto.
Instructions
- Preheat the oven to 375 degrees F. Wash the vegetables then chop them up into bite size pieces. Now, slice the sausage.
- Place the sausage, vegetables in a large bowl with the seasonings and oil and toss.
- Now, line a large baking sheet with parchment paper to allow for easy clean up. Lay out in a single layer on the pan and bake for 30 minutes.
