I love to prep this recipe at the beginning of the week and eat throughout. I don’t like having to think about breakfast in the morning, so prepping dishes like this one is the way to go! Below are the suggested ingredients, but feel free to add any other additional veggies you have in your fridge! The more, the merrier, right?
PREP TIME: 10 MINUTES
COOK TIME: 45 MINUTES
TOTAL TIME: 55 MINUTES
9 by 9 square casserole dish. I have this one here!
12 cage free eggs
2 peppers, diced
1 purple onion, diced
1 tablespoon dill
1 cup of spinach
Olive oil spray
OPTIONAL: 10 pieces of cooked bacon, crumbled OR 6 sausage links pre-cooked, chopped AND/OR cubed sweet potatoes
Preheat the oven to 400.
Whisk together all of the eggs. Then, once the eggs are whisked thoroughly add the other ingredients.
Spray the square casserole dish with EVOO.
Add the mixture to the dish and bake for 40 minutes OR until you can poke through the middle and there is no liquid.
