Deviled Eggs

I constantly hear from clients that they struggle to pack their lunch during the week because it takes too much time to prepare. The truth is that prepping healthy meals does not have to require a lot of time and energy. I like to set aside an hour every Sunday to prep my meals. I feel so much better when I am prepared for the upcoming week. Deviled eggs are the perfect meal and they take only ten minutes to prep. You can eat the eggs with some veggies or put them on a salad. When I pair them with salads, I love to use my dairy free ranch on top!

Ingredients:

10 eggs (I like pasture raised)

½ cup avocado mayo – If you have not yet switched from regular mayo to avocado mayo, you need to. Avocado mayo is made with avocado oil vs. canola oil. Canola oil has zero nutritional value and is highly refined. Avocado oil is loaded with healthy omegas for your brain, plus it is tastier ????

1 tablespoon paprika

¼ cup black olives

2 pieces of bacon, crumbled

2 tsp yellow mustard

1 tablespoon lemon juice

Instructions:

Place the eggs in a pan with at least 3 inches of water.

Put the stove on high, bring the eggs to a boil.

Once the water is brought to a boil, set the timer for 5 minutes.

After 5 minutes, remove the eggs, place them in a bowl and store in the fridge.

After the eggs are cold for 30 minutes, peel the eggs and cut in half horizontally.

Scoop out the yolk.

Place the yolks along with all other ingredients EXCEPT the olives and bacon in a blender.

Divide the batter among the egg halves.

Sprinkle the bacon and olives on top.

ENJOY!
