
Chicken Caesar Wraps AKA the perfect snack wrap. These wraps are my absolute favorite. I could eat them everyday for lunch. The crispy chicken and the slaw is the perfect combination.
Ingredients:
6 tortillas. I like either Siete’s brand or Thrive Market’s coconut wraps (which are my favorite).
½ cup Primal Kitchen caesar dressing. You can find it here.
1 avocado, sliced.
For the chicken:
1 pound chicken breast cut into slices.
1 cup tapioca flour.
2 eggs, whisked.
1 tablespoon avocado oil.
1 tsp cayenne pepper.
For the slaw:
1 bag pre-cut cabbage slaw.
½ cup avocado mayo.
¼ cup apple cider vinegar.
For the chicken:
Place the whisked egg in a bowl.
In a separate bowl mix the tapioca flour with the cayenne pepper.
Put a pan on the stove on medium with the avocado oil. Once the pan is hot dip the chicken slices in the egg mixture and then dip in the tapioca flour and place on the pan.
Flip the chicken after 4 minutes and cook for an additional 4 minutes.
Cut the chicken in half – if it is white it is done!
For the wrap:
I like to heat my wrap in the toaster for a minute beforehand.
Then, place the slaw in the wrap, add the chicken and avocado, and drizzle the caesar dressing. Sprinkle lime and cilantro on top if desired.
For the slaw:
Mix all ingredients throughout.
