*Note, this recipe can be made keto without the raisins and carrots.
1.5 pounds of chicken breast
1 cup of avocado mayo, (I love this brand. Thrive market sells a vast list of healthy food alternatives for a fraction of the cost)
½ cup chopped shredded carrot
¼ cup raisins
½ cup celery, diced
1 teaspoon curry powder
Preheat the oven to 400.
Pound the meat with a meat tenderizer.
Place the chicken in the oven with 1 cup of water in a baking dish and bake for 30 minutes.
Once the chicken cools, cut it into small cubes. I like using these cooking scissors!
Then, mix the avocado mayo with the curry.
Mix the mayo with the chicken and all other ingredients.
Serve cold over greens!
