This recipe only takes 15 minutes to prepare which means this delicious meal can be on the table in under 1 hour.
Meatloaf was always a staple in my house growing up. It is one of those dishes that everyone loves! It is always a huge hit when we put it on my Pittsburgh Based Meal Prep menu. Why I Love This Recipe
- This recipe is truly a family favorite in our home! Meatloaf is one of my favorite comfort foods. We even sell this recipe on my Pittsburgh based meal prep menu.
- Unlike a traditional meatloaf recipe, this recipe does not contain breadcrumbs.
- My recipe is naturally gluten free, dairy free, soy free, nut free and grain free. This recipe is also great for those with food allergies.
- You can prepare this meat mixture the morning of so all you need to do is bake it for dinner.

Simple Ingredients
- Ground beef-This acts as the base of the meatloaf.
- Avocado oil-To saute the onions and garlic in.
- Garlic powder, onion powder, sea salt, and dried parsley-To season the loaf.
- Eggs and cassava flour-This binds the meatloaf together. The cassava flour is in place of regular breadcrumbs.
- Ketchup-For flavor.
Glaze ingredients
- Ketchup-This acts as the base.
- Coconut sugar-This sweetens this glaze up and acts as the brown sugar.
- White vinegar-This adds a nice tangy touch to the sauce.
- Onion powder-For flavor.

Substitutions and Variations
- Ground beef-You can also use ground turkey, ground pork, or even ground chicken.
- Cassava flour-You can also use gluten-free breadcrumbs or any other kind of gluten free flour like almond flour. You can also use gluten-free bread crumbs in place of the flour.
- Eggs-I do NOT suggest trying to make this recipe egg free by using flax eggs or a chia egg.
- Coconut sugar-You can also use brown sugar in its place if you would like.

Tips and Tricks
- Tip #1: Make sure you sautee the onion before adding it to the meatloaf mixture! This adds so much flavor.
- Tip #2: Do not cook this recipe in a loaf pan. Since beef has a higher fat content in it than other kinds of protein, the fat needs to be able to run off on the sheet pan. If you cook it in a loaf pan, the meatloaf will be too oily because of the fat content.

Easy Gluten-Free Meatloaf Without Breadcrumbs
Equipment
- baking sheet

Ingredients
- 2 pounds ground beef
- 2 tbsp avocado oil
- 1 whole yellow onion chopped
- 4 cloves garlic minced
- 2 eggs
- 3/4 cup cassava flour
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 2 tbsp ketchup
- 1.5 tsp sea salt
- 2 tsp dried parsley
For the glaze
- 3/4 cup ketchup
- 1.5 tsp white vinegar
- 2 tbsp coconut sugar
- 1/2 tsp onion powder
Instructions
- Heat the avocado oil over medium heat, add onions and sautee until translucent. Add the garlic and cook until just softened. In a separate bowl mix the remaining ingredients with the meat. Preheat oven to 375 degrees F. In large mixing bowl, combine all ingredients and mix well.
- Add a piece of parchment paper to a baking sheet, then add the meatloaf mixture on top. Form it into a meatloaf shape, using the paper to squeeze the air out. Add the glaze on top of the raw meatloaf. Bake for 45 minutes or until the beef mixture internal temperature reaches 160 degrees F with a meat thermometer.
For the glaze
- Add all ingredients to a bowl and mix.
