- 2 pounds ground beef
- 2 tbsp avocado oil
- 1 whole yellow onion chopped
- 4 cloves garlic minced
- 2 eggs
- 3/4 cup cassava flour
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 2 tbsp ketchup
- 1.5 tsp sea salt
- 2 tsp dried parsley
For the glaze
- 3/4 cup ketchup
- 1.5 tsp white vinegar
- 2 tbsp coconut sugar
- 1/2 tsp onion powder
Heat the avocado oil over medium heat, add onions and sautee until translucent. Add the garlic and cook until just softened. In a separate bowl mix the remaining ingredients with the meat. Preheat oven to 375 degrees F. In large mixing bowl, combine all ingredients and mix well.
Add a piece of parchment paper to a baking sheet, then add the meatloaf mixture on top. Form it into a meatloaf shape, using the paper to squeeze the air out. Add the glaze on top of the raw meatloaf. Bake for 45 minutes or until the beef mixture internal temperature reaches 160 degrees F with a meat thermometer.
Storage: You can store these ribs in the fridge for up to 5 days.
