Make sure the fish is completely thawed. Then, pat dry the dish with paper towels.
Place the tortilla chips in a bag and crush, add 1/4 cup of the cassava flour to the bag and then set aside.
In a separate bowl, mix the remaining 1/4 cup of cassava flour, sea salt, pepper and garlic powder in a bowl.
In another bowl, crack the two eggs and whisk them.
Now, set aside a sheet pan. Dip each piece of fish into the flour and spice mixture, then dip them into the egg mixture, then dip it into the flour/ tortilla mixture to coat. You will want to shake off any excess batter so it does not make the pan messy. Set each filet aside on the baking sheet until you are ready to pan sear.
Using a large frying pan, put it on the stove on medium-high heat. Add in your avocado oil to the pan and let the pan get real hot. Make sure you have enough oil in the pan to cover the bottom surface area. If you don't add a little more oil.
Add the fish fillets to the pan in a single layer and bake for 2-3 minutes on each side. This kind of dish does not need to cook very long. To get a perfectly fried fish, be sure to set your timer for just 2-3 minutes on each side.
