Dairy Free Enchiladas

Easy, "cheesy" mexican dairy free enchiladas. This dish is perfect for all of your dinner and hosting needs.

Ingredients

  • 1 pounds chicken breast Cooked and cubed.
  • 6 whole siete almond flour burritos This is my favorite grain free tortilla brand, feel free so sub them out for other tortillas.
  • 15 ounces enchilada sauce 1 can
  • 1 cup dairy free cheese optional to top
  • 1 can refried beans

Cashew sauce:

  • 1 cup cashews to garnish
  • 1/2 cup water
  • 1/3 cup nutritional yeast
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp sea salt

Instructions

  • Preheat the oven to 350 degrees F.  Make the cashew cheese by placing everything in the blender on high for 2 minutes, then scrape the sides down and blend again for another 2 minutes.
  • Pour a thin later of enchilada sauce down on the casserole dish. Make each enchilada by adding equal parts chicken and beans. Then divide up the cashew cheese in the shell and roll. Add remaining sauce on top and optional cheese to sprinkle. Bake for 20-30 minutes.
