For the orzo salad:

- 1 cup cherry tomatoes Washed and sliced in half.
For the pesto:
- 2 cups fresh basil
- 1/4 cup pine nuts
- 4 cloves garlic
- 3/4 cup olive oil
- 1/4 cup nutritional yeast
- 1 lemon juiced
- 1/2 tsp sea salt
Cook the orzo according to the box, be sure not to over cook.
Place the pesto in the food processor and blend until smooth
Mix the pesto with the orzo, add in the tomatoes and serve cold.
Storage: This dish can be stored in an airtight glass container for up to 5 days in the refrigerator. This dish should be served cold.
