- 1/2 cup butter Melted. You can also use ghee, vegan butter or coconut oil. I like coconut oil.
- 1.5 cups sugar I prefer coconut sugar.
- 3 eggs
- 2 tsp baking soda
- 1/2 tsp sea salt
- 1/4 tsp ground cinnamon
- 1.5 cups peanut butter Make sure your peanut butter is well mixed prior to measuring it out.
- 4 cups oats I like steel cut oats, make sure they are certified gluten free!
- 1/2 cup chocolate chips I am dairy free, so I prefer dairy free ones.
- 1/2 cup chocolate candies I like the better for you m&m inspired chocolate quinoa candies from the Unreal brand.
Preheat the oven to 350 degrees F. Combine all of the dry ingredients together in a large bowl. Then, in a separate bowl, combine all of the wet ingredients and mix well throughout in a large mixing bowl. You can do this by hand or with a stand mixer. Now, combine both bowls. EXCEPT leave the chocolate candies out if you are using those.
Line a baking sheet using parchment paper and use a large cookie scoop (I like using ones that yield a 3 inch cookie) scoop the cookie dough into small balls. Lightly press down on the dough to get it nice and flat. Add the candies on top and bake for 15 minutes.
