Paleo Pepperoni Pizza Chicken

The perfect paleo pizza alternative!

Ingredients

  • 4 thick chicken breasts roughly 2 pounds
  • 8 pieces of pepperoni – more if you want pepperoni on top as well! I like turkey pepperoni by Applegate because there are no additional nitrates added.
  • 1 cup store bought pizza sauce or you can make your own
  • 1 tablespoon dried oregano
  • 1 tablespoon dried parsley
  • 1 tablespoon dried garlic
  • 1/2 - 8 ounce container of Kite Hill almond cream cheese you only need 4 ounces OR regular cream cheese if you are not dairy free

Instructions

  • Preheat oven to 400.
  • Using a meat tenderizer, hit the meat on both sides 3 times. This will give the meat a better texture. This is the one I use.
  • Cut each chicken breast in half horizontally. Remember you want to stuff it!
  • Place all of the spices in a bowl and mix.
  • Put the sauce in the bowl, and the cream cheese (remember you only half of the cream cheese) in a separate bowl. This will prevent you from getting raw chicken everywhere!
  • Now cut each individually chicken breast virtually (this will give you room to stuff it) DO NOT cut it all the way through cut it half way so both sides are still attached to one another.
  • Lift the top half of the chicken breast and place 2 pepperoni halves, a spoonful of pizza sauce, a spoonful of almond cream, and then a spoon full of spices.
  • Add additional pepperoni  or almond cream on top if desired.
  • Bake for 35 minutes.
