Sticky Honey Ginger Pulled Pork (Paleo)

Equipment

  • Instant pot or crockpot

Ingredients

For the sauce:

  • 1.5 cup honey
  • 1 tbsp ginger fresh ginger. If you are using ginger powder, use half the amount. Note the taste may change. I HIGHLY suggest using fresh ginger.
  • 6 cloves garlic minced
  • 1/2 cup sriracha sauce OMIT FOR AIP
  • 2 tbsp apple cider vinegar
  • 2 tbsp coconut aminos

To garnish & serve: (OPTIONAL)

  • cauliflower rice
  • red pepper flakes OMIT FOR AIP
  • sesame seeds I am OBSESSED with the sesame seeds on top. OMIT FOR AIP
  • green onions

Instructions

For the sauce:

  • Place all ingredients in a saucepan on low to medium heat and bring to a simmer. Wait to make the sauce until you are ready to serve:

Crockpot version:

  • Place the pork, coconut aminos, and broth in the crockpot on low for at least 10 hours. The thing about pork shoulder is it gets softer and more tender the longer you cook it, so if you are using the crockpot because you have to work during the day and you want dinner ready when you get home, do not sweat it if it's longer than 10 hours!

Oven version:

  • Place the pork, coconut aminos, avocado oil, and broth in a casserole dish and bake at either 200 or 250 degrees. 250 degrees for 8 hours OR 200 degrees for 12 hours. Be sure the pork reaches an internal temperature of 190 degrees.

Pressure cooker version:

  • Place the pork, coconut aminos, avocado oil, and broth in the instant pot on pressure cook HIGH for 90 minutes. Make sure the valve on top is closed.  Allow the pressure cooker to manually decompress for 20 minutes then open up the valve.

To serve:

  • Once the pork is cooked, remove all of the fat within 20 minutes (if you want it will be harder to pull off.) Then, shred the pork with two forks. Add in the sauce, and serve with sesame seeds and green onions.
