Peanut Butter Chocolate Chunk Cookies

Equipment

  • mixing bowl
  • whisk or spoon
  • baking dish or cookie sheet
  • ice cream scoop
  • spatula
  • wax paper

Ingredients

  • 2 cups peanut butter creamy kind! I prefer salted
  • 2 egg
  • 2 tsp baking soda
  • 2 tsp vanilla
  • 1/3 cup coconut sugar
  • 1/3 cup maple syrup

OPTIONAL:

  • chocolate chunks use your favorite dairy free semi-sweet mini chocolate chips! I like to use the brand Enjoy Life. You can top off your cookies with chocolate if desired.

Instructions

  • Preheat oven to 350 F. Place all ingredients in a bowl and whisk together until smooth. Add the wax paper to the baking sheet. Using a 1.5 tbsp cookie scoop, scoop the cookie dough onto the baking sheet and then using a fork to add the cross hatch design on top. Bake for 28 minutes.
