Gluten Free S’mores Cookies

Equipment

  • baking sheet
  • Wax paper or silicone baking mat
  • mixing bowl

Ingredients

  • 1/3 cup coconut oil or olive oil will work
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 2 1/2 cups almond flour
  • 1/2 cup dairy free chocolate chips
  • 1/2 cup marshmallows make sure they are dairy free
  • 2 eggs sub flax egg for vegan

Instructions

  • Preheat the oven to 350. Mix all ingredients together in a mixing bowl until mixed throughout. Line a baking sheet with wax paper or a silicone baking mat. Using a 2 inch cookie scoop, scoop out the dough into 15 cookies and bake for 20 minutes. Allow the cookie to rest prior to moving them. See the notes about the optional chocolate ganche.

Do not substitute the almond flour. 
You can add optional chocolate on top.
