Sloppy joes are one of my favorite dishes. I specifically love this sloppy joe recipe because 1) it is super easy and 2) sweet potato buns are the perfect alternative to bread buns. ENJOY!
2 pounds beef (I use organic grass fed beef because of its dense nutrients)
1/2 yellow onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
16 ounces tomato paste
1/2 cup water
2 tablespoons yellow mustard
1 tablespoon apple cider vinegar

1 tsp paprika
2 sweet potatoes, sliced 1/4 inch thick
In a large skillet on medium heat melt the ghee and add the peppers and onions, sauté for about 6 minutes.
Add ground beef and garlic to the pan and break up the meat. After 5 minutes add all other ingredients (except for the sweet potatoes). Cook on medium heat for 10 minutes.
For the “buns”
Preheat the oven to 350.
Line the cooking sheet with wax paper and spray the sweet potatoes with olive oil.
Bake for 25 minutes.
