To me, pumpkin spice anything is the perfect Fall treat! While I have never been a huge fan of Starbucks famous pumpkin spice latte, I have always been a huge fan of pumpkin spice baked goods. These pumpkin spice muffins double as the perfect treat and an easy, on the go, filling breakfast. Check out the recipe below!
Makes 12 muffins
Prep time: 10 minutes
Cook time: 20 minutes
2 cups steel cut oats
1 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon pumpkin spice
1 cup almond milk
3/4 cup plain canned pumpkin
1 egg (can sub flax seed if you are avoiding eggs)
1/4 cup grade A maple syrup
Optional – dairy free chocolate chips (I like Enjoy Life. You can get them at Whole Foods)
Preheat oven to 350.
Place all ingredients in a bowl and mix.
Bake for 30 minutes.
Let muffins sit for 10 minutes before transferring.
Store in the fridge for up to a week or freeze.
