Protein loaded pancakes
Most of us, if not all of us, are dealing with limited ingredients during this quarantine. This morning I woke up craving pancakes but we did not have any pancake batter… So, I decided to do an experiment and, ta-da, these protein-loaded pancakes were born! They are naturally dairy free, paleo, gluten free, and whole 30 compliant!
PREP TIME: 5 MINUTES
COOK TIME: 5 MINUTES
TOTAL TIME: 10 MINUTES
SERVINGS: 3-4 LARGE PANCAKES
1 large banana or two small (You can also use 1 cup of baked sweet potatoes OR squash)
½ teaspoon cinnamon
2 tablespoons of nut butters (use whatever you have!)
OPTIONAL: scoop of protein powder for extra protein. I like this brand.
Place all ingredients in a food processor.
Add a tiny bit (1 teaspoon) of oil/ ghee to a skillet at medium heat.
Take a ¼ cup of batter and add it to the pan.
Cook on each side for 2-3 minutes or until golden brown.
These are certainly sweet enough to eat without syrup. I like serving mine with berries!
