These small batch paleo apple spice muffins are soft, moist and loaded with protein. They taste like they are just from the bakery, yet they are much healthier! These muffins store so nicely making them perfect for meal prep with yet still the option of baking them fresh. They are naturally gluten free, grain free, dairy free and refined sugar free.
How To Make Gluten Free Apple Spice Muffins
First things first, let’s talk about the base flour here. My go to in paleo baking has always been almond flour. I find that it is the easiest to bake with. Almond flour cannot be used interchangeably with other gluten free flours therefore it is important to use almond flour when the recipe calls for it.
The baking soda and baking powder are musts in this recipe as they allow the muffins to rise. This is why it is important to only fill the muffin liner ¾ the way.
Coconut sugar is my go to paleo sugar sweetener; however maple and coconut sugar can be used interchangeably for most of my recipes.
The coconut oil keeps these muffins moist!
The eggs are the key ingredient here. These muffins are protein loaded. The eggs also act as a binding agent. They also help keep these muffins moist, and let’s be real. Who likes dry muffins?
Now, for the apples. I prefer to bake with red apples but you can totally sub the red apples for green apples.
How To Bake These Paleo Muffins
I like to use muffin liners, however you can use a silicone muffin pan to make these muffins. I love cooking with silicone too because they are easy to clean, you do not have to worry about the muffins sticking, and you are not wasting paper.
First, you are going to want to mix all of the ingredients in a bowl. Be sure not to over-mix, mix just enough that you cannot see the separate ingredients. Now, either line your muffin tin ( or not if you are using silicone) and divide the batter. You want to make sure the individual muffin pans are only filled ¾ of the way or they have the potential to overflow.
Next, bake these little guys for 30 minutes. Once they are done baking let them cook for 10 minutes then pop them out. If you are not serving immediately, store these muffins in an airtight container in the fridge.

- 1 cup coconut sugar
- 2 tsp vanilla extract
- 2 tbsp coconut oil
- 4 red apples diced
- 4 eggs
- 1 tsp cinnamon
- Preheat oven to 375 F and place liners in muffin pan.
- In a large mixing bowl, add all ingredients and use an electric mixer to combine.
- Spoon batter into liners until each liner is about 3/4 of the way full. Place in oven for 30 minutes.
