Preheat the oven to 425. Wrap the washed beets in foil with minced garlic and oil. Bake for an hour or until soft. Once cooled, peel the skin and place beets in food processor with all other ingredients.
Boil cauliflower on stove. Drain water, cool, and soak up any additional moisture with a towel. Add to food processor with all other ingredients.
3 small beets
4 cloves of garlic
1 head of cauliflower
1/3 cup olive oil
1/4- 1/2 cup of tahini (start with 1/4 cup, add more if taste buds desire)
1/4 teaspoon turmeric
1 squeezed lemon
Salt and pepper to taste
