Growing up my mom would make the most amazing peanut butter chocolate chip cookies. They would literally melt in your mouth. When I started eating gluten and dairy free, I was determined to find a way to still eat my favorite treats. I have found that many of the gluten free recipes will crumble before they hit your mouth… not with these almond butter chocolate chunk cookies! I hope you guys enjoy these as much as I do ????
Almond Butter Chocolate Chunk Cookies
Makes 18 cookies.
2 cups almond flour
½ cup coconut flour
1 tsp baking soda
½ cup almond butter
½ room temp coconut oil
½ cup maple syrup
2 tsp vanilla extract

Preheat the oven to 350.
Mix all ingredients except for chocolate chips.
Divide the cookie dough up into 18 small balls, place on the cookie tray.
Using your thumb, indent each cookie. Place 1 chocolate chunk in the middle of each cookie.
Bake for 10 minutes.
Let sit for 10 minutes before transferring to the cooling rack.
